Kefalotiri is a hard cheese that comes with a wax outer coating. Its main characteristic is the little air holes throughout its body, the slightly yellowish colour, its sweet and salty taste with a pleasant aroma. The kefalotiri is made from: pasteurised goat's milk, salt, cultures, rennet (non-animal).
